Quesadilla Night

It is quesadilla night!

Quesadillas are a big hit in our family. It is fun making them together with everyone having their own tasks. One person will rolled out the dough, one person will cook the quesadilla shells, and another will fill the quesadillas with cheese and spinach. The quesadillas are then returned to cook until the cheese is melted, holding it all together.

Next we set up an toppings bar with sour cream, pickled jalapenos slices, diced tomatoes, shredded lettuce, and hot pepper sauce. We all impatiently wait our turn to help ourselves to the toppings. Me? I like sour cream, about 20 jalapenos slices and a dash of hot pepper sauce. 

The recipe makes 6 quesadillas, so two lucky people get cold quesadillas for lunch or everyone gets a half of a quesadilla for lunch and a salad.
